Recipe Name Lemon Biscuits

Ingredients 565g (1lb 4oz) Self-raising Flour
340g (12oz) Sugar
170g (6oz) Butter
25g (1oz) Lemon Peel
4 Eggs
1 tbsp Lemon Juice
Preparation Rub the warmed butter into the flour.

Mix in the sugar and very finely chopped lemon peel.

When well mixed, add the whisked eggs and the lemon juice.

Beat the mixture thoroughly for about two minutes.

Drop dollops of the mixture from a spoon on to a buttered tin, all about 5cm (2 inches) apart. (the biscuits will spread when they get warm.)

Place the tin in a warm oven.

Bake to a pale brown for 15 to 20 minutes.
