Recipe Name Ginger Snaps

Ingredients 4 oz Plain flour
1½ oz Fat
1 oz Sugar
½ tspn Ground ginger
½ tspn Mixed spice
¼ tspn Bicarbonate of soda
1 tspn Vinegar
2 dessert spoons Syrup
1 pinch Salt
Preparation Mix all dry ingredients together except Bicarbonate of soda.

Rub in fat and add the syrup to the mixture.

Put Bicarbonate of soda in cup, add the vinegar and as it fizzes pour it over the mixture.

Mix together well keeping the mixture quite dry.

Roll out and cut into shapes.

Bake for 15 to 20 mins in a moderate (350F) oven.

Makes about 20 / 25
