Recipe Name Fig Hazelnut Cookies

Ingredients 2 large egg whites
4 oz brown sugar
1 tsp vanilla extract
4 oz rolled oats
4 oz ground hazelnuts
1 tablespoon very finely chopped figs
1 tablespoon fresh lemon juice
Grated zest of 1 lemon
2 tablespoons sunflower seeds
Preparation Preheat the oven to 350 F

Line three baking sheets with parchment paper

Beat the egg whites and 1 tablespoon of sugar in a large bowl with an electric mixer at medium speed until soft peaks form

With mixer at high speed, gradually add the rest of the sugar beating until stiff peaks form

Use a large spatula to fold in the vanilla essence, oats, hazelnuts and figs

Drizzle with lemon juice and sprinkle with the zest

Drop teaspoons of the mixture 1 inch apart onto the baking sheets.

Sprinkle with sunflower seeds.

Bake, one sheet at a time for 12-15 minutes or until lightly browned

Leave to cool
