Ingredients 6 egg yolks
1/2 teaspoon salt
1/3 cup light cream
1 tablespoon melted butter
1/3 cup granulated sugar
2 1/4 cups flour
1/2 teaspoon ground nutmeg
1 tablespoon grated lemon rind
icing sugar
Preparation Beat together the egg yolks and salt until you have a thick and light mixture.

Beat in the cream, the sugar and the butter.

Sift together flour and nutmeg.

Add the flour and nutmeg mix to the egg yolk mixture with lemon rind.

Mix very well, then leave to chill for about one hour.

Roll out 1/4 of the mixture at a time, keeping the rest chilled until needed.

Roll 1/16 inch thick, then cut in 1 to 1 1/2-inch wide strips.

Cut the strip diagonally at 4-inch intervals.

Make 1 inch slit lengthwise in centre of each piece.

Slip one end back through the slit.

Fry a few at a time in deep fat (350°F) until golden brown (about 1 or 2 minutes).

Remove from fat the with a slotted spoon to avoid injuries.

Drain well on paper towels to remove excess fat.

Sprinkle well with icing sugar.

Cool, and eat, or store in an airtight container.
