Recipe Name Crunchie Bar Cookies

120g unsalted butter
90g light brown sugar
60g white granulated sugar
100g self raising flour
1 large egg
1 tsp vanilla extract
1/2 tsp baking powder
Pinch salt
290g roughly chopped Crunchie bars

Preparation Preheat oven to 180 C/ 350 F / Gas mark 4

Line two large baking trays with baking powder

In the bowl of an electric mixer, mix the butter and sugars until light and fluffy.

Add the egg and vanilla extract and mix together well

Sift the flour, baking powder, and salt together, then add to the butter and egg mixture.

Mix together gently, then fold in the Crunchie bar pieces.

Form the dough into 2 1/2 inch balls and place onto prepared baking sheet 1 inch apart

Bake for approx. 8 minutes or until the cookies are firm on the edges but still soft in the centre

Remove from oven and leave to cool on a wire rack.
