Recipe Name Canadian Maple Shortbread

Ingredients For the Maple Butter
2/3 cup maple syrup
1 cup butter, at room temperature

For the Shortbread
3/4 cup maple butter
2 cups flour
pinch salt
Preparation Bring the maple syrup to the boil in a small saucepan, and reduce by half.

Remove from heat and let it cool to room temperature.

Add the butter and stir into the syrup until the mix is well blended.

Put the butter mix into the fridge until it is firm.

This should give you about 3/4 cup of Maple butter.

Now for the shortbread...
Mix the maple butter, flour and salt until well blended.

After mixing, shape the dough into a ball.

Flatten it to a rough disc shape.

Wrap in plastic and put it in the refrigerator until it is well cooled.

Preheat oven to 350 F.

Remove the biscuit mix from the fridge and rollout to about 1/4 inch thick.

Cut into biscuit shapes, place on baking parchment and cook until just golden brown (about 10-15 min).
